• 4 Bacon rashers
  • 4 Eggs
  • Baby spinach or kale


Step 1

Preheat oven to 180

Step 2

Grab a muffin tin and grease 4 compartments with coconut oil or butter

Step 3

Crack eggs into a bowl and whisk

Step 4

Finely chop baby spinach and add to egg mixture

Step 5

Cut each bacon rasher in half so you have 8 pieces

Step 6

Now create your breakfast cups

  • Line each muffin tin compartment with 2 bacon halves
  • Pour 1/4 of the egg mixture over each of the bacon lined compartments
  • Cook in oven for 10 min until egg mixture is golden and fluffy and bacon crispy

Step 7

Flip your breakfast cups out of the muffin tin and serve
