Ingredients

Pancakes – 4 Servings

  • 1 large banana
  • 2 Eggs

Filling

  • Frozen berries
  • Coconut cream (Ayam is my favourite brand)
  • Vanilla essence
  • Honey

Method

Step 1

Firstly make your cream as it needs to chill in the fridge for 60 min to thicken

  • In a bowl add 1 tin of coconut cream, a large spoon of honey and a splash of vanilla essence
  • Mix together well and place in fridge

*Note: the cream will be a runny consistency at first but will thicken in the fridge

Step 2

Get your frozen berries of choice, let them defrost and soften. Once soft, mash them up to make a jam

Step 3

To make pancakes

  • In a bowl mash the banana till it is like a paste
  • Then add eggs and mix well till like a pancake mixture (there will be some lumps, these will cook out)
  • Heat a pan with coconut oil or butter
  • Then spoon mixture into pan to make a pancake about the size of your hand palm
  • Cook each side for a minute or until golden. Set them aside and allow to cool

Step 4

Now it is time to assemble your rollups. Simply take pancake, smear on some berry jam, add a dollop of your chilled cream. Then roll up your pancake

Step 5

Repeat process for each pancake, stack them on a plate and serve
